my budget oven build

Right now I’m putting together an oven out of scrap metal I got for free. It is 30" wide x 24" deep and 5 foot high
I already have mechanical contactor I plan to use. I plan to use the parts out of a household oven to control this. But I want to leave my options open to later upgrade to a pid. And later add a fan. How should i run my wiring? Do I run conduit to boxes? For a light do you just use a normal keyless porcelain light with normal light bulb
