Cooling New A/C Unit Which Way to Go

There are a few ways to go about using it as a chiller. Build an enclosure around the ano tank and just blow cold air in constantly. Or do the same but use an eletronic temp control with a probe in the bath to turn the A/C on and off. I already have a bunch of ETCs (Eletronic Temp Control).
Another way would be to remove the A/C housing and build a water tight box around the cooling coils and use a gycol solution to run through aluminum tubing coiled in the bath to do somewhat direct cooling, also utilizing an ETC for exact temp control.
