air tight oven vs vented oven

another thing i am confused about. I read about how you want a nice air tight oven with a door seal…… but then i read you should vent your oven… how does this work.
What is the purpose of venting besides letting fumes out? does the air expand that much during heat up? How does one vent an oven without loosing all the heat like a chimney?
